Emily Campbell

Patient Care Coordinator

Emily is a pre-medical student at Colorado State University, majoring in Food Science and Human Nutrition. She is deeply passionate about patient care, nutrition education, and the transformative potential of research. Her journey in healthcare began in high school, where she worked as a Certified Nursing Assistant. In this role, she gained meaningful, hands-on experience that instilled in her a profound respect for empathy, patience, and individualized support, all of which are qualities that remain central to her approach to care.

At Colorado State University, Emily continues to build on this foundation through her role as a student nutrition ambassador for the Department of Food Science and Human Nutrition, where she engages with peers and the broader community to promote healthful, evidence-based practices. She has also expanded her clinical experience by working in a patient-centered private practice, where she strengthened her skills in communication, clinical support, and nutrition education.

Outside of academics and clinical work, Emily finds joy in movement and creativity. She has trained in ballet for most of her life and continues to be drawn to its discipline, grace, and emotional depth. At CSU, she is the president and co-founder of the contemporary dance club, where she leads a vibrant, supportive community of more than 80 students. Emily also enjoys hiking, skiing, watercolor painting, reading, and spending time in nature with loved ones, all of which bring balance and renewal to her busy life.
